Japanese Salmon With Edamame Salad


So i have been trying my best to eat relatively healthy, as i've recently started a fitness/health regime. I have also recently been diagnosed as Coeliac (can't eat gluten), but as do a lot of people i still have my bad moments. This recipe is one that i have been thoroughly enjoying over the last few months. It is so delicious and relatively easy!! In a few days i will share another one i love. 


(Serves: 4, Prep: 25 mins, Cook: 15 mins)

* 4 x 200g skinless, boneless salmon fillets
*1 tbsp white miso
*1 tbsp brown sugar 
*1 tbsp finely grated ginger
*2 garlic gloves, crushed
*1 tbsp chilli flakes
*2 bunches asparagus, trimmed
*2 cups frozen edamame 
*50g baby spinach leaves 
*4 green onions, thinly sliced
*1 tbsp sesame seeds, toasted, to serve

Dressing: 

*1/4 cup soy sauce
*1/4 cup rice-wine vinegar
*2 tsp sesame oil
*2 tsp finely grated ginger

1. Preheat oven to very hot, 220°C (428°F). Line an oven tray with baking paper
2. Place salmon on tray. In a small bowl, combine miso, sauce, sugar, ginger, garlic and chilli.  Brush all over salmon. Bake 10-12 minutes until browned and cooked to taste. 
3. Meanwhile , blanch asparagus and edamame in a saucepan of boiling water 1 minute until bright green. Transfer to a bowl of iced water. Drain well. Pod Edamame. 
4. Dressing: 
In a jug, whisk all ingredients together. 
5. In a large bowl, combine spinach and onion with blanched vegetables. Toss gently with dressing. 
6. Serve salmon on a bed of salad. Sprinkle with sesame seeds.
