Japanese Salmon With Edamame Salad

So i have been trying my best to eat relatively healthy, as i've recently started a fitness/health regime. I have also recently been diagnosed as Coeliac (can't eat gluten), but as do a lot of people i still have my bad moments. This recipe is one that i have been thoroughly enjoying over the last few months. It is so delicious and relatively easy!! In a few days i will share another one i love.

(Serves: 4, Prep: 25 mins, Cook: 15 mins)

* 4 x 200g skinless, boneless salmon fillets
*1 tbsp white miso
*1 tbsp brown sugar
*1 tbsp finely grated ginger
*2 garlic gloves, crushed
*1 tbsp chilli flakes
*2 bunches asparagus, trimmed
*2 cups frozen edamame
*50g baby spinach leaves
*4 green onions, thinly sliced
*1 tbsp sesame seeds, toasted, to serve

Dressing:

*1/4 cup soy sauce
*1/4 cup rice-wine vinegar
*2 tsp sesame oil
*2 tsp finely grated ginger

1. Preheat oven to very hot, 220°C (428°F). Line an oven tray with baking paper
2. Place salmon on tray. In a small bowl, combine miso, sauce, sugar, ginger, garlic and chilli.  Brush all over salmon. Bake 10-12 minutes until browned and cooked to taste.
3. Meanwhile , blanch asparagus and edamame in a saucepan of boiling water 1 minute until bright green. Transfer to a bowl of iced water. Drain well. Pod Edamame.
4. Dressing:
In a jug, whisk all ingredients together.
5. In a large bowl, combine spinach and onion with blanched vegetables. Toss gently with dressing.
6. Serve salmon on a bed of salad. Sprinkle with sesame seeds.

Yummy, Yummy, Yummy!!
Hope you give it a go and like it as much as i do :)
Enjoy

Gorgeous Mirina Statement #2

Mirina Boho 'Pretty Girl' Floral Statement Necklace // Forever New Hat similar here // H&M Singlet similar here // Temt Jeans similar here // H&M Sneakers similar here // Mimco rosegold bracelet

Here is my other amazingly beautiful Mirina Collections Statement Piece ; Boho 'Pretty Girl' Floral Statement Necklace. Isn't so so gorgeous?!

I am completely obsessed with my two pieces. They are so easy to style and they go with casual outfits or with dressier/fancier outfits, all the while still being the statement piece of whatever look.

I chose to go with a fairly casual look of black ripped jeans with my H&M sneakers. My black shiny silk H&M singlet, forever new fedora and of course the statement necklace.

Im  actually kind of obsessed with this outfit. I honestly would wear this all the time.
If you like this look and want to get your own statement piece, this one or another, then head on over to Mirina Collections and have a look through the many, many choices! Don't forget to use my discount code;
